Pineapple Chicken and Rice
In a large skillet, heat the olive oil over medium heat. Add the cubed chicken and cook until golden brown and cooked through. Remove the chicken from the skillet and set aside.
Sauté the Vegetables:
2. In the same skillet, add the chopped onion, garlic, and red bell pepper. Cook until the vegetables are softened, about 5 minutes.
Add Pineapple and Rice:
3. Stir in the pineapple and cook for an additional 2 minutes.
4. Add the jasmine rice, chicken broth, soy sauce, ginger, salt, and pepper to the skillet. Bring to a boil.
