Creamy Parmesan Italian Sausage Soup

Cook the Sausage:
In a large pot or Dutch oven, heat the olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it up into small pieces as it cooks. Remove the sausage from the pot and set aside.
Sauté the Vegetables:
2. In the same pot, add the diced onion, garlic, carrots, and celery. Sauté until the vegetables are softened, about 5-7 minutes.
Add Broth and Tomatoes:
3. Pour in the chicken broth and diced tomatoes. Stir in the Italian seasoning, salt, and pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for 15 minutes.
