Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.
Prepare the Batter:
2. In a large mixing bowl, cream together the sugar, eggs, and butter until light and fluffy.
3. Mix in the vanilla extract.
4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
5. Gradually add the dry ingredients to the wet ingredients, alternating with the sour cream, mixing just until combined.
6. Fold in the chopped cranberries and orange zest.
