8 slices of deli ham (or turkey, chicken, etc.)
8 slices of deli cheese (Swiss, cheddar, mozzarella, etc.)
1 cup fresh spinach leaves
1/2 cup sliced red bell peppers
1/4 cup unsalted butter, softened
1 tablespoon Dijon mustard (optional)
Salt and pepper to taste
