Preheat your oven to 180°C (350°F) and grease a 9x9-inch baking dish.
In a large bowl, whisk together the pumpkin puree, granulated sugar, egg, milk, and melted butter until smooth.
In a separate bowl, mix the flour, baking powder, salt, cinnamon, nutmeg, and ginger.
Gradually add the dry ingredients to the pumpkin mixture, stirring until well combined.
Pour the batter into the prepared baking dish, spreading it evenly.
In another bowl, combine the brown sugar and hot water, stirring until the sugar dissolves. Carefully pour this mixture over the batter in the baking dish.
Bake for 35-40 minutes, or until the centre is set and the top is golden brown. The cake will have a pudding-like layer at the bottom.
Allow the cake to cool slightly before serving warm. Top with whipped cream or vanilla ice cream if desired.
