Creamed Corn Snacking Cake Recipe
Preheat your oven to 180°C (350°F) and grease an 8x8-inch baking dish.
In a large bowl, whisk together the melted butter and sugar until smooth.
Add the eggs, sour cream, and vanilla extract, and mix until well combined.
Stir in the creamed corn, ensuring it’s evenly distributed.
In a separate bowl, whisk together the cornmeal, flour, baking powder, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Pour the batter into the prepared baking dish and smooth the top.
Bake for 30-35 minutes, or until a toothpick inserted into the centre comes out clean.
Allow the cake to cool slightly before slicing and serving.
