Christmas Baklava Delight
Prep the Nut Mixture: In a large bowl, combine the chopped pecans, chopped walnuts, and ground cinnamon. Set aside.
Layer the Phyllo Dough: Brush a baking pan with melted butter. Lay a sheet of phyllo dough in the pan and brush with more butter. Repeat until you have about 8 layers.
Add the Nut Mixture: Sprinkle a thin layer of the nut mixture over the phyllo dough. Add a few more layers of phyllo dough, brushing each layer with butter. Repeat the process until all the nut mixture is used, finishing with a top layer of phyllo dough.
Cut and Bake: Using a sharp knife, cut the baklava into squares or diamonds. Bake in a preheated oven at 350°F (175°C) for about 45 minutes, or until golden and crispy.
Prepare the Syrup: While the baklava bakes, combine sugar, honey, lemon juice, and vanilla extract in a saucepan. Bring to a boil, then reduce heat and simmer for 10 minutes.
Drizzle and Serve: Once the baklava is baked, immediately pour the hot syrup over the entire pan, making sure it soaks into every piece. Allow the baklava to cool before serving.
