1. **Prepare the Chicken:**
- Season the chicken cutlets with salt and pepper.
- Place the flour in a shallow bowl and dredge the chicken cutlets in the flour, shaking off the excess. Set the floured chicken on a large plate.
2. **Cook the Chicken:**
- Heat the olive oil in a large skillet over medium-high heat.
- Add the chicken cutlets to the skillet and cook until golden and cooked through, about 3 minutes per side.
- Transfer the chicken to a large plate and set aside.
3. **Make the Sauce:**
- In the same skillet, add the butter, minced shallot, and lemon zest.
- Cook over medium heat, stirring constantly, until the shallot is softened, about 1 minute.
- Add the lemon juice and cook, scraping up any browned bits from the bottom of the skillet.
- Stir in the chicken broth and parsley; cook, stirring often, until the sauce is slightly thickened, about 2 minutes.
4. **Finish the Dish:**
- Remove the skillet from heat and slowly whisk in the heavy cream until well combined.
- Return the chicken cutlets to the skillet and spoon the sauce over them.
- Garnish with quartered lemon slices before serving.
