Italian Subs with Sausage and Peppers
In a large skillet, heat the olive oil over medium heat.
Add the sausages and cook until browned on all sides and cooked through, about 10 minutes. Remove from the skillet and set aside.
In the same skillet, add the sliced peppers and onion. Season with salt, pepper, and dried oregano. Saute until the vegetables are soft and caramelized, about 8 minutes.
Slice the cooked sausages lengthwise (do not cut all the way through) and return them to the skillet with the vegetables to warm through.
Preheat the broiler. Open the hoagie rolls and place them cut-side up on a baking sheet. Toast under the broiler until lightly golden, about 2 minutes.
To assemble the subs, spread a layer of marinara sauce on each roll. Place a sausage and an equal amount of peppers and onions on each roll. Top with shredded mozzarella.
Broil the assembled subs until the cheese is melted and bubbly, about 3 minutes.
Serve hot.
