COOKIES STUFFED WITH LEMON CREAM

In a bowl, mix the soft butter with the icing sugar until you obtain a homogeneous mixture.
Add the lemon zest and egg yolk, continue mixing.
Finally, add the flour and baking powder, mix very well until you obtain a uniform dough. Make a ball and put the cookie dough in the refrigerator for 10 minutes.
After this time, on a floured surface, stretch the dough to a thickness of one centimeter. Then, with the help of a round cutter, shape the cookies.
On a silicone mat, place the cookies and bake them at 170°C for 20 minutes. When they are ready, let them cool.
For the lemon filling, in a bowl, beat the soft butter with the icing sugar and lemon juice until you obtain a smooth and homogeneous texture.
Finally, place the previous filling in a pastry bag, put a little cream on one of the cookies and place another one on top, as if they were alfajores. Repeat this process with all of them.
