Macerate all the fruits and zest with orange juice overnight.
Preheat the oven to 160°C (320°F). Line a loaf pan with parchment paper.
Cream the butter and sugar together until light and fluffy.
Beat in the eggs, one at a time, ensuring each is well incorporated before adding the next.
Sift in the flour and mix until well combined.
Fold in the macerated fruits and any remaining juice.
Pour the batter into the prepared loaf pan and bake for 1 hour or until a skewer inserted into the center comes out clean.
