Outback Steakhouse Alice Springs Chicken

Preheat your oven to 350°F (175°C). Grease a baking dish.
Season the chicken breasts with salt and pepper. Place them in the prepared baking dish.
Brush each chicken breast generously with honey mustard.
Heat the vegetable oil in a skillet over medium heat. Add the sliced mushrooms and sauté until they are tender, about 5 minutes.
Spoon the sautéed mushrooms over the chicken breasts.
In a medium bowl, combine the Monterey Jack and Cheddar cheeses. Sprinkle the cheese mixture evenly over the chicken breasts.
Top each chicken breast with crumbled bacon.
Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
Garnish with chopped parsley if desired. Serve immediately. Enjoy!
