Divine Chocolate Eclairs

Prepare the Eclairs:
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a medium saucepan, combine water, milk, butter, sugar, and salt. Bring to a boil over medium heat.
Remove from heat and add flour all at once, stirring vigorously until the mixture forms a ball and pulls away from the sides of the pan.
Transfer the dough to a large mixing bowl. Let it cool for 5 minutes.
Add eggs, one at a time, beating well after each addition until the dough is smooth and glossy.
Transfer the dough to a piping bag fitted with a large round tip. Pipe 4-inch long strips onto the prepared baking sheet.
Bake for 20-25 minutes or until puffed and golden brown. Allow to cool completely.
Prepare the Filling:
In a large mixing bowl, beat the heavy cream, sugar, and vanilla extract until stiff peaks form.
Transfer the whipped cream to a piping bag fitted with a small round tip. Insert the tip into the end of each eclair and fill with cream.
Prepare the Chocolate Glaze:
In a small saucepan, heat the heavy cream until it just begins to simmer. Remove from heat and add the chocolate chips, stirring until smooth and glossy.
Dip the tops of each filled eclair into the chocolate glaze, letting the excess drip off. Place the eclairs on a wire rack to set.
