Monterey Sausage Pie

Preheat the Oven:
Preheat your oven to 375°F (190°C).
Prepare the Crust:
In a medium bowl, mix the flour and salt.
Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
Gradually add ice water, one tablespoon at a time, until the dough comes together.
Press the dough into the bottom and up the sides of a 9-inch pie dish. Prick the bottom with a fork.
Pre-bake the Crust:
Bake the crust in the preheated oven for 10 minutes. Remove from the oven and set aside.
Prepare the Filling:
In a large skillet, cook the sausage over medium heat until browned and cooked through. Remove from the skillet and drain any excess fat.
In the same skillet, sauté the diced onion and bell pepper until tender, about 5 minutes.
In a large bowl, whisk together the eggs, milk, heavy cream, garlic powder, paprika, salt, and black pepper.
Assemble the Pie:
Spread the cooked sausage evenly over the pre-baked crust.
Sprinkle the shredded Monterey Jack and cheddar cheese over the sausage.
Add the sautéed onion and bell pepper on top.
Pour the egg mixture over the top, ensuring it’s evenly distributed.
Bake the Pie:
Bake in the preheated oven for 35-40 minutes, or until the filling is set and the top is golden brown.
Garnish and Serve:
Allow the pie to cool for a few minutes before garnishing with chopped fresh parsley, if desired.
Serve warm.
