Creamy Lobster Mashed Potatoes

Place the cubed potatoes in a large pot and cover with cold water. Add a pinch of salt.
Bring to a boil over high heat, then reduce to a simmer and cook until the potatoes are tender, about 15-20 minutes.
Drain the potatoes and return them to the pot.
Prepare the Lobster:
If using fresh lobster tails, steam or boil them until the meat is opaque and cooked through. Let them cool, then remove the meat from the shells and chop into bite-sized pieces.
Make the Garlic Butter:
In a small saucepan, melt 1/4 cup of the butter over medium heat.
Add the minced garlic and cook for 1-2 minutes until fragrant. Remove from heat and set aside.
Mash the Potatoes:
Add the heavy cream, whole milk, remaining 1/4 cup butter, and Parmesan cheese to the pot with the potatoes.
Mash the potatoes until smooth and creamy. If needed, add more milk to reach your desired consistency.
Stir in the garlic butter mixture until well combined.
Combine with Lobster:
Gently fold in the chopped lobster meat.
Season with salt and black pepper to taste.
Serve:
Transfer the creamy lobster mashed potatoes to a serving dish.
Garnish with fresh chopped chives.
